I made these soft and chewy cookies for a lunch party with some friends – they were a big hit! These cookies combine the comfort of chewy oats and raisins with the “egg”-iness and buttery taste of cinnamon cookies. In short, I love these cookies!

- 0.75 cup Unsalted butter softened (about 12 tablespoons)
- 2 tablespoons Unsalted butter softened
Other Cookie Ingredients
- 0.5 cup Granulated sugar
- 0.5 cup Brown sugar firmly packed
- 2 Eggs
- 1 teaspoon Vanilla essence
- 1 cup Raisins
- 3 cups Oats uncooked
- 1.5 cups All-purpose flour
- 1 teaspoon Baking soda
- 1 teaspoon Cinnamon powder
- 0.5 teaspoon Salt

Instructions
- Pre-heat your oven to 350 F. In a small bowl, mix the flour, baking soda, cinnamon powder and salt.
- In a large bowl, beat the butter, brown sugar and granulated sugar together until creamy and fluffy.
- Add both the eggs and the vanilla essence. Mix well.
- Add the flour mix to the bowl, one spoon at a time and combine well.
- Add the oats and raisins and mix well.
- Take a cookie sheet and drop spoonfuls of the cookie dough onto the sheet. Try to space the dough out equally.
- Bake the cookies for 8 to 10 minutes or until the cookies are lightly browned. Remove from the oven and let the cookies cool on the baking sheet for 2 minutes.
- Transfer the cookies to a wire rack or plate to cool. Let the cookies cool completely before storing them in an air-tight container.
