Tangy and Lemony Potato Salad

This bright and fresh potato salad is creamy due to the addition of mayonnaise to the yogurt dressing and it is tangy due to the added lemon juice and lemon zest. Add a little crunch from the chopped red onions and cilantro and you have the perfect accompaniment for rice dishes or even roti.

This recipe is my adaptation of my mom’s Pomelo salad recipe and other Vietnamese pomelo salads. It is vegan, dairy-free and gluten-free but contains peanuts.

This Carrot and Date Cake has been made multiple times in my home by my mom and grandmother. I used to be in charge of grating the carrots 😉
Before my marriage, I had copied some of my mom’s recipes from her recipe book into mine – this recipe was the first cake recipe I copied – that should tell you how much I like it 🙂
