Cabbage is my husband’s favorite vegetable and his love for cabbage is well-known in my family. As a child, whenever my mother-in-law would send him to the neighborhood vegetable shop, she would have to specifically tell him to buy some vegetables other than cabbage! Otherwise, she would be stuck cooking cabbage every week 🙂
That funny and embarrassing story being said – I don’t cook cabbage nearly as often as I should. Cabbages are good sources of vitamin K, vitamin C and dietary fiber. Cruciferous vegetables like cabbages also have good anti-carcinogenic properties as well.
This simple stir-fry is tasty and makes a good side dish for roti or rice. My mom used to make this in the microwave (see Recipe Notes) for my office lunch. This stir-fry is ready in a jiffy and is easy to make for busy-workday meals.
